My mom and stepdad are on their way home. Overall, it was a very good visit. I scanned in some of Mom's old pictures and used my photo software to blow them up and fix some of the old stains and age marks on them. Mom was amazed. She's not much for computers.

The low carb diet is going okay. I found low carb ice cream and cookies that help fight the sweet tooth I have. I'm very accustomed to finishing a meal with something sweet. Old family habit, I guess. Tonight marks the end of the second week on this diet. I started at 235 lbs, ended at 226 lbs at the end of the first week, and comes to 221 lbs as of today. I was aiming for a loss of about 30 lbs and I'm almost half way there.

Hey Clint! Thanks for the advice, they certainly look good and at 2 carbs each, wont wreck things. I'll have to see if they have them at the grocery. Where do you buy them?

you're almost there.. and I'm surprised about how many low carb products are there in the US...I guess this is becoming a big industry... But as long as it works... hey, it's good!

I'm very surprised at the different foods that are coming as low carb. There are even low carb Doritos! They really hit the spot there for me, they're my favorite.

Everyone is jumping on the band wagon, in terms of making low carb foods, so I expect there will be more and more available in the future.

What I'd like to really know is ... how the hell can they make products.. low carb? is there any method? is there any technology involved? is all that technology healthy after all?

My guess is different low carb ingredients used instead of those regularly found in that product. For example, low carb pasta uses soy instead of wheat. The end result is similar, but with fewer grams of carbohydrates.

Uhm.... quite interesting... and a good reason why there aren't so many in europe... as I guess there's a moratory on transgenic soy here In Europe... so companies can't use that....

Low carb icecream!? Blue Bunny is great. I know it is a mid west brand, but we do get it out here in Seattle. I've had their butter pecan, choc/mint and their double strawberry. Strawberry one was my favorite, I'd even continue to eat that once I reach my goal (choc/mint is kind of bland).

It's been easier than I thought. Bryers makes a good low carb chocolate. I horded my carbs one night just so I could have a bowl of it. Oooooooh... was it good!!!! I'll have to keep my eye open for the Blue Bunny (or is it Bonny?) brand.

Bunny, it's Blue Bunny. The butter Pecan and Double Strawberry are both 4 grams, while the chocolate mint is 2 grams. And ya know? those 2 extra grams, you can taste it.

Been wanting to try a low carb vanilla and a diet rootbeer, wonder how that will go over????
