From what I've been told here, the true flavor of a traveling draft Guinness depends largely on how often the bar cleans out the beer taps and lines. The older and out of the way pubs don't clean them as often and it maintains a certain flavor of the stout. The more expensive and posh places tend to clean them more often and it loses something when they do.
I had a pint at a neat pub called Gibney's in Malahide and it was really tasty. I then had one at my hotel, which was a 4-star joint, and the pint was missing something there. I really could tell a difference.
... nevertheless, the pint last night was stellar :)
