Hmmm...I guess Don Pablo's has been much more successful that I could imagine. I opened the very first one in (of all places) Lubbock, Texas. Except back then it was known as Julio's. (The parent company was based out of Lubbock at the time.) It was my first restaurant job.....got hired as a bartender (with NO experience) thanks to my brother who worked for a sister restaurant.
I then helped open their second restaurant, the first to have the Don Pablo name in Arlington, Texas. Aahhhh, the memories. This time I was a manager. I also worked in DP#3 and #4 in the DFW area until I had a run-in with the GM who happened to be related by marriage to one of the owners....but it's ok. She got hers less than two weeks after firing me when they audited her books and found there was more than cooking going on in the kitchen and showed her the way out.
Glad you enjoyed your food. Even more....glad you had some good scenery to watch. I could go for both today!
