Cooking Again

For a day when we had snow ALL DAY, I actually made it to work and stayed there all day. Amazing!

I thought the snow wouldn't have hit by the time I left, so I decided to prep dinner for today last night. On my way home from work, I got a hankerin' for a pot roast. So after battling the crowds at the grocery store who were cleaning the shelves of milk, bread, and toilet paper before the white death hit, I made it home and spent a bit of time slicing up onions, celery and carrots. This morning at 6 AM, the roads were clear, so I dumped the veggies, the roast, and the seasonings in my crock pot and left for work.

I've been told I'm a good cook and I do enjoy it. However, cooking for one is rough and most of the recipes I know will feed at least five (thanks to Mom). With the new diet/exercise program, I'm cooking dinner a lot more. Granted a crock pot dish isn't exactly complicated cooking, but I go by the Paula Poundstone definition where if it involves more than three steps, it's cooking.

Needless to say, even though I got home later than I had planned, the aroma as I walked in the garage door was welcoming. So after exercising (which wasn't easy with the smell of that roast in the air), I pigged out on meat and vegetables. SOOOO GOOOOD!

The only negative: I was so hungry I forgot to take a photo to accompany this entry before I dug in.

Crock pots rock.

Did you use a crock pot condom?

Look up some recipes from Eating Well. They're good for you and they're often for serving four people. We've found that really means two or (maybe) three people who weigh more than 150 pounds!

It's a disposable liner for a crockpot. You place it into the pot, cook in it, then toss it...you don't have to scrub baked-on goo.

LOL... And sadly I didn't have a single potato in the house. Next month introduces more carbs into the diet. We'll see what I can come up with then.

But the vegetables that were in the crock were DELICIOUS!
